Greek Briam is a traditional Greek meal made with with potatoes, zucchini, tomatoes, red onions and plenty of olive oil. The dish tends to use vegetables that can be found easily in your garden along with a lot of fresh and dried herbs. As such it makes it the perfect meal to rustle up with only just a few simple ingredients and little skilled required. This type of food belongs in the ladera family (meaning in olive oil) which includes a variety of dishes that area heavily cooked in extra virgin olive oil. Staying true to Greek tradition, if there is one thing that shouldn’t be used sparingly, its the extra virgin olive oil. All the wonderful tastes and flavours comes from this which makes the vegetables taste delicious.
This may be considered as a side dish for some people but in Greece, Briam is actually a main dish. Once all the vegetables have been enjoyed, you can take your favourite bread and dip it into the olive oil which makes for a very filing meal.

The Greek Deli Recipe
Ingredients
- 2 pounds potatoes
- 4 large zucchini
- 4 small red onions
- 6 ripe tomatoes
- ½ cup olive oil
- 2 tablespoons chopped fresh parsley (Optional)
- sea salt and freshly ground black pepper to taste
Instructions
Firstly preheat the oven to 400 F.
Cut all vegetables into large pieces.
Add all of the vegetables, fresh/dried herbs, salt, pepper, olive oil, and tomato into a bowl and mix well until the vegetables are completely coated.
Pour the vegetables evenly onto a pan.
Put the pan into the oven and set a timer for 1 hour.
After 30 minutes of cooking time, use a spatula to carefully flip over the vegetables.
After an hour total has gone by, check the briam and make sure the potatoes are completely cooked. The vegetables should have a nice golden colour to them. If not, place back in the oven to bake for 10 more minutes.
- Remove from the oven and leave to cool slightly before serving, or serve at room temperature.
