Vinification: Pre-fermentation extraction 3-5 hours. Static settling after 48 hours. Alcoholic fermentation by selected yeasts, at very low temperatures. Maturation 2 months in stainless steel tanks, with the fine fermentation lees applying regular, gentle stirring.
