Ingredients:
- 1 package of phyllo dough (thawed if frozen)
- 300g feta cheese, crumbled
- 200g ricotta cheese
- 2 eggs
- 2 tablespoons fresh dill, chopped (optional)
- 1/4 teaspoon black pepper
- 1/4 cup olive oil or melted butter (for brushing)
Instructions:
- Prepare the Filling:
- In a large mixing bowl, combine the crumbled feta cheese, ricotta cheese, and eggs.
- Mix until well combined. Add the fresh dill (if using) and black pepper. Stir to incorporate all ingredients evenly. Set aside.
- Prepare the Phyllo Dough:
- Carefully unroll the phyllo dough and place it on a clean, dry surface. Cover it with a damp kitchen towel to prevent it from drying out.
- Take one sheet of phyllo dough and place it on a flat surface. Brush it lightly with olive oil or melted butter.
- Place a second sheet of phyllo dough on top of the first and brush it with oil or butter. Continue this process until you have layered four sheets.
- Cut and Fill the Phyllo:
- Using a sharp knife, cut the layered phyllo dough into strips about 3 inches wide.
- Place a teaspoon of the cheese filling at the end of each strip.
- Fold the dough over the filling to form a triangle. Continue folding the strip in a triangular shape, maintaining the triangle pattern, until you reach the end of the strip.
- Repeat this process with the remaining phyllo dough and cheese filling.
- Bake the Tiropitakia:
- Preheat your oven to 180°C (350°F).
- Place the filled triangles on a baking sheet lined with parchment paper. Brush the tops with olive oil or melted butter.
- Bake in the preheated oven for 20-25 minutes, or until the phyllo dough is golden brown and crispy.
- Serve and Enjoy:
- Remove the Tiropitakia from the oven and let them cool slightly before serving.
- These mini cheese pies are best enjoyed warm, but they are also delicious at room temperature.
